Icewine is made from grapes left on the vine until they freeze, then picked and pressed while still frozen, which leaves a small amount of very sweet, concentrated juice. Ontario's VQA rules require the grapes to be picked at −8°C or colder, which is why Niagara Icewine is harvested on the coldest nights of winter.
